09 Jan Marrakech experts bring traditional, regional cuisine home with new cookbook
A new recipe book from the owners of boutique property portfolio, Marrakech Riad, promises to bring their signature welcoming Moroccan hospitality and delicious, wholesome cuisine to the kitchens of home cooks everywhere.
Representing a selection of favourite, homecooked dishes regularly enjoyed by guests of the riads and taught in the Marrakech Riad cookery school, the book invites readers to relish recipes passed down through generations of Moroccan families. Each creation is inspired by fresh seasonal produce from the local souks and designed to be shared with family and friends, in the Moroccan way.
“There is a wonderful flexibility about this cuisine, most dishes are remarkably simple to prepare and readily adaptable,” says co-author Mike Wood. “The cookbook has been a while in the making and we’re delighted to be able to share our love of the traditional, regional food cooked by our team with a wider audience.”
From breads to tagine cooking, tasty dips and salads, the book covers all the essentials for savouring a taste of Marrakech home cooking without having to leave the country.
Mike and wife Lucie began their love affair with Marrakech in the early noughties when they found and began a renovation of their first property, Riad Cinnamon. Since then they’ve added four further riads to their portfolio, all based around the old town medina in the heart of the Red City. In 2016 they added a cookery school to Riad Star offering half-day courses with local chefs, who have each contributed to the book.
The cookbook costs from £7.50 and is available from Amazon.
Book a three-night Flavours of Marrakech break from £199 per person. The price includes three nights’ accommodation; arrival and departure transfers from Marrakech Airport; traditional tagine dinner on arrival; daily breakfast including local delicacies; a private half day guided food heritage walking tour visiting the spice district, food markets, a bakery and traditional Meshwi lamb ovens; as well as a half day cookery course. www.marrakech-riad.co.uk
